BLACKBERRY ROLL
Pies, Cakes and Desserts
Ingredients
- 1 pint blackberries
- 1 cup sugar
- 1 tablespoon butter
- 1 cup flour
- 1/4 cup vegetable shortening
- 3/4 teaspoon baking powder
- 1/2 teaspoon salt
- ice water (approx 1/3 cup)
- flour
Directions
Add 1/2 cup sugar to berries and mix well. Then place in a strainer or colander to drain.
Meanwhile, make pastry. Sift flour, salt and baking powder together. Cut in shortening with pastry blender or 2 knives. Mix with ice water until consistency of biscuit dough. Roll out on floured board in a rectangle.
Place 1 1/2 cups of berries on pastry and fold edges over to cover berries. Seal edges well. Place on cookie sheet and bake in 375° oven until slightly brown (approximately 20 minutes).
Crush remaining berries and strain juice. Add enough water to make 1 cup. Pour in small saucepan; add 1 tablespoon flour to remaining 1/2 cup sugar; then add juice. Cook until mixture begins to thicken. Remove from heat; add butter and stir. Slice roll in serving sizes and spoon sauce over to serve.
